Millets are a group of highly variable small-seeded grasses, widely grown globally as cereal crops or grains for fodder & human food.

Most of the millet has a good amount of sulfur amino acids like tryptophan, cystine, and methionine, the richest source of calcium among cereals, high in dietary fiber, rich in polyphenols – gallic, ferulic p-hydroxybenzoic, protocatechuic and p-coumaric, Good Source of iron.

Important steps in the manufacture of fermented beverages include malting, mashing, and fermentation of the extracts.
